Smoked Cheese Squares

Print Recipe

Three cheeses -- mozzarella, smoked Gouda, and smoked cheddar -- provide a pleasant
backdrop for the sweet onion and date topping.

Ingredients
2 medium onions, thinly sliced
1 tablespoon butter or margarine
1 tablespoon olive oil
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
1/4 cup pitted whole dates, snipped
1/4 cup pine nuts or slivered almonds
1/2 cup shredded mozzarella cheese (2 oz.)
1/2 cup shredded smoked Gouda cheese (2 oz.)
1/2 cup shredded smoked cheddar cheese (2 oz.)
1 16-ounce Italian bread shell (Boboli)

Directions
1. Preheat oven to 450 degree F. In a large skillet cook onion in butter and oil over
medium heat for 10 minutes, stirring occasionally. Stir in sugar, vinegar, and dates.

Cook and stir 5 minutes more or until onions are golden brown. Remove from heat; stir in nuts. In a bowl combine cheeses; sprinkle evenly over bread shell. Top with onion mixture. Place bread shell on an ungreased baking sheet. Bake for 8 minutes or until cheese is melted. Let stand 5 minutes before cutting into 2-inch squares. Makes about 30 appetizers.
