Crumbly Apple Pie

This is kind of a mix between an apple crisp and apple pie.
It has a crust on the bottom, but not the traditional pastry/pie crust.

Crust Ingredients:
1 1/2 cups rolled oats
1/2 cup whole wheat pastry flour
1/4 teaspoon salt
3/4 teaspoons cinnamon
3 Tablespoons maple sugar, or other granulated, unrefined sweetener
1/2 teaspoon pure vanilla
6 Tablespoons safflower or corn oil (corn oil has a little more "buttery" flavor

To make crust:
1. Combine all of the dry ingredients in a large mixing bowl.
2. Add the vanilla and mix well.
3. Add the oil, 1 Tablespoon at a time, mixing well between each addition.
4. Press all but about 1/4 - 1/2 cup of the mixture into a pie plate.

Filling Ingredients:
About 6 cups sliced apples, 8 smallish whole apples (peeled or unpeeled)
2-3 Tablespoons fresh lemon juice
1 1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon nutmeg
3 Tablespoons whole wheat pastry flour
2 Tablespoons brown rice syrup
2 Tablespoons liquid sweetener (agave nectar or maple syrup are good options)

To make filling and assemble pie:
1. Preheat the oven to 375 degrees.
2. Pour the lemon juice over the apples as soon as they are sliced.
3. Mix the spices and flour into the apples.
4. Add the brown rice syrup and liquid sweetener.
5. Pour the filling into the crust and sprinkle the reserved crust mixture over the top.
6. Bake the pie for about 45 minutes, or until the apples are cooked and the crust is 
browned on top and edges. If the crust starts to brown too early,
cover the pie loosely with unbleached parchment paper and
 aluminum foil until it has about 10 minutes left to bake.
